Can someone explain to me why this reacts differently?

I saw someone else’s question on how to make Famous Monster by Birth red, but my problem was not making it red, there was an issue that made the title no longer centered over the table. I saw that I was suppose to insert style into the brackets with colspan instead of making new brackets,

Can someone explain why this is?
